The meat is sliced and soaked in cold water (about 68 degrees Fahrenheit) for hours. Then, was hung up on a fire at an altitude of about 2 feet. Once every 2 to 3 hours, turn the island once more, and add a few layers of banana leaves to the top to ensure the temperature is evenly distributed. After about 4 days, the meat pieces are reduced in size, dry, with a pleasant aroma and dark red. They are constantly kept on fire and can be preserved from 6 months to 1 year. Before use, just add water and boil for 3 to 5 minutes.
